Shubun – Kanro- Dragon lurks under deep water -

Autumn rain.
Thin rain drops make air misty white and it continues to rain with faint sound.
Feeling a little bit chilly but pleasant, makes us think the severe summer heat was not real.
Autumn shows both calm and ferocious face.
ShuowenJiezi, the first Chinese character dictionary says
“Dragon goes up to the sky on the spring equinox day and lurks under deep water on the autumn equinox day".
From ancient days, it has been said Dragon rules rain, controls heavy rain and drought.
Dragon may be excited not to have any regret just before going down to the deep water.

ShuwenJieze also says the left side of Dragon is the figure of flying.
This is 2 thousand years ago.
The people in those days had amazing expression.

The traditional Japanese calendar marks the passing of the seasons and changes
in the natural world through the names given to different times of year.
In the 72 microseasons, “Distant thunder”, “Hibernating insects surface” and “Rain moistens the soil” are in spring.
Corresponding to these, in autumn, there are “Thunder ceases”, “Insects hole up underground” and “Farmers drain fields”.
There are beginning and ending in the changes of seasons.
Thus nature builds up “season” repeatedly.
When you find the change of season, your heart pounded and we will remember people live together with lives of nature.

In the season of “Cold dew”, we will have the microseason of “Chrysanthemums bloom”.
From old days, it was said Chrysanthemums are treated as a miraculous medicine of longevity and their drops from petals were sweet dews.
We will serve our dishes starting from drops of Chrysanthemum, Chrysanthemum sake.
Wishing you to spend rich times which your heart is pounded.

Autumn is in full swing and you will see it on all over our dishes.
We prepare Grilled Barracuda, Steamed flour and green of Chrysanthemum cake, Matsutake mushroom for Nimonowan.
Please seek your autumn not with taste but also your 5 senses.
Our specialite, Shrimp siokara-pickled amadai will be also served as Yakimono.
We welcome our guests also with some other new omotenashi.
