From Soukou(霜降) to Rittou(立冬)〜 Fuyuta - Rice field in Winter 〜

“Fuyuta” is the rice field in the winter after the rice harvest. In the city, it has been a long time since we have not seen it; however, in the 1970s, the rice field was common scenery even in city. In those days, the seed of lotus flower was planted after the rice harvest. Then, in the spring, fuyuta changed to the lotus field, and lotus flower served as green manure and enabled rice to ripen without chemical fertilizer.
Now, technology allows us to raise seeding earlier and to plant rice before blooming the lotus flower. It is caused by the competition to harvest new rice whose price is highest in a year. As a result, farmers stopped planting the lotus seed, and the use of chemical manure becomes general instead of green manure.
We might lose a precious thing in the past. Now is the time to think and act for the next generation.

The season changes from autumn to winter. Please enjoy both season’s tastes at Kashiwaya. By the way, the opening day of hunting crab is around the beginning of winter in the Hokuriku and Sanin region. Accordingly, some parts of our cuisine will be also changed by then. We will prepare Matsuba crab instead of Ise lobster.
