Best Day for ChrysanthemumBetween Cold Dew and Frost Descent
From October 8 to November 6

September 9 is Chōyō that is also called as Chrysanthemum festival. On the day of the solar calendar, the hot weather still remains; however, the day on the Tenpō calendar is October 25 on the solar calendar just when the chrysanthemum flower shows their beauty. Kashiwaya will provide cuisine related to chrysanthemum from cold dew to frost descent.

Meaning: The chrysanthemum flower at Court is so beautiful that I could mistake them for stars in the sky.

During the Wei dynasty, Emperor Wen dispatched an imperial official to Mount Rekken to investigate headspring of the elixir water. At the mountain, chrysanthemum is in full bloom spectacularly and the official met Kiku-Jidō (Jidō of the Chrysanthemum) around a hut. The official was surprised to hear that the Jidō served Emperor Mu of the Zhou dynasty 700 years ago; however, he still looked like a boy. From this legend, the chrysanthemum is said to be the elixir of life.

With the legend, chrysanthemum was introduced into Japan in the Nara period(710-784). At first, the flower was prized as a medicine giving longevity; however, in the Heian era(794-1185/1192), aristocrats who were fascinated by its beauty and elegant aroma brought the flowers at the Chōyō and enjoy composing the waka poem. This event called “Kiku kurabe.”

In the Genroku era(1688-1704), horticulture spread among people. They painstakingly cultivated chrysanthemums and, at Chōyō, showed them at their front door and entertained the passers-by. The place showing the flowers is called “Kiku kadan.”

At Kashiwaya, we are preparing cuisine related to chrysanthemum (kiku). The cuisine will start with kiku-sake and sakizuke, and hot soup dish with kiku will follow. It will remind you that the chrysamthemum used to cherish as a medicine. Then, otsukuri which bring “Kiku kurabe” to your mind will be served. Hassun is related to “Kiku kadan.” Now, in the Reiwa era, our guests are enjoying eating the chrysanthemum dishes. Please enjoy the Japanese chrysanthemum history with our cuisine.
