世界海洋デーは国際連合が公式には２００８年に毎年６月８日をその日と定めました。

はじめにテーマとしたのは、「私たちの海、私たちの責任」です。

柏屋は生業として日常的に魚介類を料理して日々の糧を得ていることもあり、海洋の問題を考え取り組んでいます。

・魚を人の手で育てることを改めて考え、人にとって安全で美味しく、低環境負荷の生産方法に取り組む、魚の生産者「大瀬戸水産」と連携し、養殖魚の将来に向けた可能性を追求しています。

・料理人として海洋資源、海洋環境の問題に取り組み、考え、行動する「RelationFish株式会社」に協力し活動をしています。

・海洋資源の保全に取り組む国際的なレストラン協会であるルレ・エ・シャトーのメンバーとして今年の取り組み、レッドリストに掲載される「鰻をメニューから外す」に賛同し、鰻の資源量が一定の改善が見られるまでこの方針に従うことを決めました。

・世界でも早くからダイバーズウォッチを作ってきたスイスの時計メーカー「ブランパン」は、海洋保全の活動に取り組んでいます。その日本唯一のブランドフレンドとして、柏屋も海洋保全に取り組みます。

食は、人にとって大事なことだからこそ、心にとめて考えようと思います。

“World Oceans Day” was officially recognized by the United Nations in 2008.  They selected the first annual themes as follows: “Our Oceans, Our Responsibilities”.  Kashiwaya considers and tackling ocean issues, since we cook seafood on a daily basis for our livelihood.

• We are pursuing possibility of the future of farmed fish. We work with aquaculturist “Oseto Suisan” whose production methods are low-impact on environment and who produce safe and tasty fish for human.
• As a chef, we are working with “RelationFish Corporation” which is committed to thinking and acting on the issues of marine resources and the ocean environment.
• As a member of Relais & Chateaux, an international restaurant association dedicated to the conservation of marine resources, we support this year’s initiative: to remove eels from our menu, which features on the International Union for Conservation of Nature’s (IUCN) Red List of Threatened Species. We have decided to follow this policy until we see a certain improvement in eel stocks.
• Blancpain, a Swiss oldest diver’s watch manufacturer in the world, has been involved in marine conservation activities. As its only brand friend in Japan, Kashiwaya is also committed to marine conservation.

Food is important for people. That’s why we seriously think about ocean issues.

*Grain full/ Grain in Ear: The traditional East Asian calendars divide a year into 24 solar terms. “Grain full” is the 8th solar term and starts on May 20th. “Grain in Ear” is the 9th solar term and starts on June 5th.
