Following Executive Chef Hideaki Matsuo’s receipt of the Michelin Guide Mentor Chef Award, we were honored to be invited by the Michelin Guide for an interview.

The interview reflects on Chef Matsuo’s journey from his childhood to the present day, and also touches on personal stories and experiences that he does not often have the opportunity to share.
